“Banh hoi long heo” in Phu Long (Phu Long vermicelli)
It’s not a perfect tour in Phan Thiet if you haven’t tried “Banh hoi long heo” in Phu Long. This special food includes “Banh hoi”( Steamed fine rice vermicelli), cooked pig’s chitterlings, rice papers, vegetables, and dipping sauce. Unlike its simple outside, “Banh hoi” requires sophisticated cooking process. In order to create wonderful taste, makers have to choose the rice with good quality. Then, the rice is soaked into water overnight. After that, it is washed under water three or four times and is prepared carefully through other stages to become the final spotless, dry vermicelli.
About 7km to the north of Phan Thiet, there is a center of “Banh hoi long heo”. We onced enjoyed “Banh hoi” in a stall named “Huyen”. It’s only 7am, but the stall is full of customers. It is the chewy, hot pig’s chitterlings, fresh vegetables, rice papers, and dipping sauce that attracts many cutomers.
Ms. Do Thu Thuy-the stall owner- said “In addtion to the advantage of available local raw materials such as vermicelli, rice papers, the main factor that decides the good quality of “Banh hoi” is the good hygienic source of pig’s chitterlings”.
Not only the owner of Huyen stall, but also the other owners have to get up early at around 4am to collect fresh and good pig’s chitterlings and carefully clean before boiling. Especially, the owner has to prepare vegetables the previous day.
There are, currently, nearly 10 stalls serving “Banh hoi”. However, not all of the stalls are preferred by customers. “Huyen” stall and “Quynh”stall are the only two famous stall attracting customers. There are many factors that attract people here, such as the large parking lots, the feeling of convenience, the fresh air, and above all the delightful taste of “Banh hoi” that suits many customers’ favorite. According to Ms. Thuy, either small size dishes or large size dishes contain boiled pig’s heart, liver, kidney, small intestine and pork. Particularly, every piece of rice paper is cleaned, cut into pieces, then exposed to dew or covered by banana leaves to create the flexibility.
Ms. Nguyen Thi Muoi, the owner of “Quynh” stall said “You shouldn’t sell boiled pig’s chitterlings, but buying the raw material and cooking them”. After having been selling “Banh hoi” for 25 years, Ms. Muoi and her sons are successful in making the brand name “Banh hoi long heo Quynh” popular. There are 40 to 70 customers come here to try “Banh hoi”.
Right in the center of Phan Thiet can you find stalls that serve “Banh hoi”. However, people who want to try the best “Banh hoi” won’t hesitate to come to Phu Long. Mr\. Phuc (at Binh Hung ward, Phan Thiet city), who regularly travels to Phu Long to enjoy “Banh hoi”, said “Banh hoi here is tasty, hygienic, and the service is excellent”.
There are many reasons why Phu Long vermicelli endears itself to a lot of customers. Generally, it is the quality of “Banh hoi” that is the main reason. Besides, the loyalty of customers and the reputation also play an important role in attracting people here.
