The season of the mudskippers is usually between July and September (following the Lunar calendar). The biggest mudskipper can weigh from 3 to 5 kilogram while the medium mudskipper is from 1 to 2 kilogram and the smallest one is only 0,5 kilogram. Commonly, the big mudskippers are chosen to to prepare for the dish because of its lots of delicious flesh. There are many dishes made from the mudskipper, such as sweet sour soup, smudskippers cooked with sauce and garlic, pepper or chilli. But one tip for the food lovers, you should only choose those fishes only weigh from 1 to 2 kilogram because their flesh and cartilage are soft and fat, and one more important thing is that they don’t have the particular odor like the other big fish

Belonging to the catfish, the mudskippers are washed and cleaned carefully by knife or they are scrubbed by the lemon grass

Next use knife to eviscerate, remove all the gut, wash the fish with salt water. Then slice the fish and put them on a plate. Dice the greave and stir with chopped green onion. After that put the steamed fish on a plate and spray the mixture of stired green onion and greave on top and roasted peanuts. It is more delicious to eat while the dish is hot. Use a piece of rice paper to roll all the vegetables like lettuce, basil, shiso, raw banana, and cucumber together with fresh vermicelli and the cooked fish. The sauce is spicy and sour. The fatty and beautifully cooked fish and the fresh vegetables turn the dish into a wonderful one that you never want to stop eating.
