Phan thiet rice powder ‘can’ cake

Have you ever vist Phan Thiet and try this kind of cake? This is a very familiar dish to locals. “Why “banh can”?”. Indeed, it should be “cang” (stretched) because when it’s finished, the cake will be inflated. This is one of the dishes that you can not miss in Phan Thiet.

Banh can looks like khot cake in the southern Vietnam. But, they are very different from each other.

Banh Can is made by pouring the rice paste into the molds. However, they are different in the way we baked. Banh Can is roasted in clay pot while khot cake is fried in the mold. When it is cooked, the baker will pull it out. Two cakes are puted in a pair and at the middle will be chopped green onion leaves.

To make banh can, bakers use a clay stove which has round body, oval bottom with 3 parts: the round lid called the mold (loaf); 10 round holes located on the surface with 10 shallow clay cups with lids; the body of the stove is used to contain coals with air holes; the bottom and the body is seperated by a perforated grille so that the coal dust may fall down. The ingredient to make cake is rice paste made from powdered soarked rice (like banh beo or sizzling cake).

Before pouring the paste to the mold, bakers put some chopped green onion or chive leaves. Each time they pour one portion, they will oil the mold with some peanut oil or port fat. So that the cake will not stick and easier to pull out

Eating when it’s hot is the best way to enjoy. However, the taste of banh can is also depended on the sauce.

Usually, people use sauce made from fish with some spicies or fish sauce with sugar. The mixture is boiled and added some tomatoes in peanut oil, chilli and fresh lemon. This cake is served with herbs, star fruits, green banana, cucumber, larka, basil leaves, sprout and salad
